Cooking and baking create heat, steam, smoke, grease and odors that can accumulate in the air and permeate rooms beyond the kitchen. A well-designed ventilation system will filter out pollutants and replace dirty air with clean, fresh air.
To remove all cooking byproducts must have four important things.
1. A canopy to capture and hold contaminants.
2. A blower capable of removing heat, steam and odors.
3. Filtration capable of liquefying and containing cooking grease.
4. Ductwork properly designed to vent byproducts outside.
